A Twist on Garlic Mashed Potatoes

Just in from Rio de Janiero! Amy Duncan has  a delicious recipe for Carrot-Garlic Mashed potatoes, just in time for the holidays! Sounds simple and sweet.

Here is what she says, "cook some carrots and potatoes until soft, brown some garlic in olive oil, mix all together with a little milk, butter, salt and pepper and MASH to the consistency of mashed potatoes...so good!"

Make sure the carrots are really soft! I was really surprised at how good this tasted...I just made it up because I had some leftover cooked carrots sitting in the fridge.

And leftovers from this could morph into soup I imagine with some delicious broth with favorite spice mixtures and interesting garnishes. How about lemony-cumin-or gingery - coriander or sage and thyme?
